New Restaurant Planned for ‘Silvermine Market’ Space

Closed since November, the Silvermine Market—located across the street from an established art gallery and school bearing the same neighborhood name—is to relaunch this year as a more upscale bistro, the property’s new owner said.

With a hopeful opening this fall—following a sorely needed and extensive renovation—the new restaurant will be open for breakfast, lunch and dinner and is designed to be “calm and nice,” according to Pavel Jansa. 

“It will be a small, cozy restaurant,” he told NewCanaanite.com.

The new restaurant will incorporate the word ‘Silvermine’ into its name and likely will feature live piano-playing, Jansa said.

Style-wise, “it’s going to be pretty much the same” though there will not be a bank of fridges such as seen in “a regular deli,” he said.

“It’s going to be more, more upscale, cleaner,” said Jansa, a Weston resident. “A relaxed, clean and nice atmosphere.”

Jansa said he envisioned something similar to the Mercantile at Graybarns—a cafe and gift shop that opened down the street in 2019, just over the Norwalk border.

“A four-star, five-star restaurant, but affordable,” he said. “You have a lot of people walking by, jogging. They can come in, drop in during the morning to read a paper, a book, something like that. That’s my goal and hopefully I can somehow accomplish that.”

On Monday, the New Canaan Building Department received an application for a partial (interior) demolition of the structure at 1032 Silvermine Road

Purchased for $960,000 in February, the 1885-built structure has been operated as a market by various parties through the decades. The Silvermine Market in its latest iteration served breakfast and lunch daily, and dinner on Friday nights.

  2. Hank and Diane Green: The former Silvermine Market is dearly missed. It had terrific food at reasonable prices (not upscale bistro prices, thankfully), was always very clean, and, best of all, had warm, welcoming owners.

    For many years, Silvermine Market was my favorite “go to” place for breakfast and lunch because of ample parking, great food, and yes, reasonable prices. I suggested Silvermine Market to local residents as well as area residents. Several remarked that it was their first time visiting the market.

    This was a favorite hangout of parents when our children took weekly art classes at Silvermine Arts Center. A wonderful retreat to enjoy coffee, a bite to eat, and chat while waiting for our children’s classes to end. Great memories.

    When I spoke to the prior owner last year, he assured me that Silvermine Market was undergoing expansion and it would re-open. I purchased a Silvermine Market gift card and I hope the new owners will honor it.

    Silvermine Market was a favorite of mine for breakfast. Great food. Reasonable prices. No fuss.
    A “Go To” place to eat and relax.
    It didn’t need an upgrade. Loved it as it was.

    • Totally agree with Carol! We LOVED Silver mine Market just as it was. Professional, Accomadating & Friendly . The food was Delicious.
      It was always clean & welcoming. It was a go to breakfast & lunch spot for get togethers with friends and family. We really miss it & hope the previous owners open a new space.
