A favorite of the popular New Canaan Farmers Market is setting up a permanent location downtown.
Badass Bagels—a sourdough bagel maker whose extras include Hot Honey Pistachio Cream Cheese, Bourbon Chocolate Chip Cookies, Sourdough Pizza Dough and Honey Nut Squash Soup—is opening at 5 Burtis Ave., according to the company’s social media and a sign in the window.
The bagels are an “entirely different from a standard yeast bagel,” the result of a four-day dough-making process, according to the Bad Ass Bagels website.
“They are made with our very own sourdough starter,” the website says. “The starter was created during the spring of 2020 during the many weeks of being home and baking and cooking anything and everything. It is a rye flour-based starter that has become very happy and active—so active that it often bubbles, expands and takes over the counter it is resting on. There was so much of it that we began giving it away to friends and family. It has made its way into many people’s lives over the last few years.”
The starter “allows the bagel dough to be naturally leavened without using commercial yeast,” according to the site. “Many people with gluten sensitivities say that they can enjoy these bagels, no problem. Or you can enjoy our gluten-free bagels, which are now available to pre-order.”
It wasn’t clear just when they’re hoping to open. According to a post from the company’s Instagram, Bad Ass Bagels will schedule an opening party here.
The commercial space on Burtis, formerly Green & Tonic, has been vacant for at least two years. In 2023, a French bakery and café announced that it would open there but never did.
