For today’s Q&A with a local business, we talk to Nube Siguenza, executive chef and owner at Cava Wine Bar & Restaurant. The Forest Street restaurant is open seven days per week for lunch and dinner, starting at noon and going to 9 p.m. Sunday through Wednesday and 10 p.m. Thursday Friday and Saturday.

New Canaanite: It’s been less than two weeks since you were able to reopen for more than pickup and delivery How are you doing?
Nube Siguenza: It’s very hard. We have to work harder and harder to make less. But I am still here. I know the community has tried to help us, is supporting us. So I try to be here for the community. That is the only way I survive.

What has the community response been like?
Very good.
How compliant have people been in terms of the restrictions, and in wearing masks in the downtown?
I do see a lot of people wearing masks. A lot of people walking as well.
What are your most popular menu items?
Fresh pasta dishes and seafood.

What is your message for customers?
First of all, thank you for all the support. Otherwise I would not be here. We couldn’t make it if we didn’t have support from this community. And it’s mostly the New Canaan community, not from outside. We don’t have [Interstate] 95. My message is appreciation, I have a lot of appreciation for the community and hopefully people are keeping healthy to get through this.
