New Canaan Butcher Shop
The owner of the newest business to open downtown—New Canaan Butcher Shop at 12 Burtis Ave.—says he’s off to a very solid start, thanks to strong Easter sales and support from the community.
Since opening his doors about two weeks ago, “it’s been going great” at the new butcher shop, according to Paul Paris.
“People have been coming in, checking us out, seeing what we have,” he said. “We’ve been doing a lot of sandwiches. People are happy with our cooked roast beef, our cooked whole chickens that we make the chicken salad from, the Cobb salad. People like our sides. They’ve just been really receptive.”
Located in the former Red Grape Wine & Spirits space with parking on Burtis or in the nearby Morse Court, New Canaan Butcher shop offers prime and grass-fed meats, Wagyu, dry-aged, poultry, lamb, pork, wild game such as elk, venison, buffalo and antelope, salads, prepared foods, cold cuts and sandwiches.
Though the shop had been open less than one week as of Easter weekend, Paris said he had about 50 orders come in, exceeding expectations.
“Most of them consisting of spiral hams, lamb racks, legs of lamb, either boneless or bone out, depending on the weight, I had many tenderloin orders, couple of rib roasts and some other orders,” he said. “For the most part I was very happy.”
More New Canaanites will have a chance to try Paris’s food at Saturday’s George Cogswell Memorial Fishing Derby, which gets underway at 8 a.m. at Mill Pond.
“I’m cooking 300 to 400 sliders,” Paris said.
Referring to his friend Lorenzo Colella’s longtime local pizza place, which traditionally supplies food for the fishing derby, Paris added, “Joe’s Pizza is off this weekend so I’m stepping in. He’s giving me a shot. I grew up catching trout down there when I was a little kid and it’s a way for me to give back. I’m very happy.”

Mike, if you like soup and haven’t yet visited the soup bar at Walter Stewart’s, it’s a must. Maybe the best-kept food secret in town. Made daily and a great variety, all high quality. Just a heads-up. (Greens on the Go at Pine Street Concessions also has some killer soups.)
